My favorite summer salad recipe
Perfect for spring & summer, because it’s strawberry time!!
Perfect if you don’t really want something hot, but something that fills you up.
Perfect for lunch, dinner and to go.
It’s also perfect for everyone!
Vegetarian, Vegan, gluten-free, dairy-free and so on! I guess just if you have a problem with strawberry, you need to get a bit creative here 😉
Ingredients for 4 people:
Ingredients
– 6 TBSP oil
– 250 g couscous or quinoa (as you prefer)
– 60 g of pine nuts
– 2-3 carrots
– 1 onion
– 1 pinch of sugar
– A bit of salt & pepper
– 1 bunch parsley
– 350 g strawberries
– 1-2 avocados
– grated Peel + juice of 1 organic lemons
how to do it:
1. Bring 400 ml water, 1 Teaspoon salt and 2 Tablespoons oil to boil. Get the couscous (or quinoa) to the boiling water and then remove it from the stove and let it covered for 5 minutes. Loosen it with a fork.
2. Roast pine nuts in a hot pan without fat, until they are golden brown, then take them out.
3. Peel and wash the carrots, cut into small cubes. Peel the onion and dice finely. Heat 1 TBSP oil in a pan. Sauté the carrots in 2-3 minutes. Add the cutted onion and continue to cook for about 2 minutes. A pinch of sugar to lightly caramelize. Pull it off the heat, and flavor with salt and pepper. Allow cooling off
4. Wash and dry parsley. Take off the leaves and chop up finely to garnish,.
5. Wash, clean and chop strawberries. Cut avocado in half, remove the core, peel and chop it.
6. Mix the lemon juice with salt, pepper and 1 pinch of sugar. Embezzled 6 TBSP oil in a thin stream. Mix all salad ingredients with the vinaigrette in a large bowl
7. Garnish with parsley
8. Enjoy 🙂

I never did it in 40 minutes to be honest 😉
I think its more about an hour or 1 hour and half 😉

Some info on the side:
If you try to avoid gluten, take the quinoa, but check the package on the back. Sometimes it can also contain parts of gluten!
